Homemade Kefir

Ingredients:
- Micro Ingredients® Organic Inulin Powder/ Organic Chicory Inulin Powder
- Micro Ingredients® Whole Milk Powder
- Micro Ingredients® Allulose Sweetener
- Kefir grains
- Water
Steps:

Dissolve 4 tbsp of Whole Milk Powder in 2 cups warm water to create reconstituted milk directly in a jar.
- Add 1 tbsp Kefir Grains,1 tbsp Organic Inulin Powder/ Organic Chicory Inulin Powder and 1 tbsp Allulose Sweetener to the milk, then stir to mix well.

Cover the jar with a tightly woven cloth or coffee filter and set aside at room temperature (60-90°F) for 18-24 hours to ferment into kefir. The kefir is ready when you notice some separation between curds and whey (a clear liquid). If it is fully separated, it could be over-fermented and will taste more sour.

Strain out the grains with a strainer, transfer the finished Kefir to a clean jar, and store it in the refrigerator. For the best flavor and freshness, use within one week.
- Return the Kefir Grains to a jar and pour milk over them for future use.
Why add allulose? Is it necessary?
Hi Penny. I bought some inulin to make yogurt and this recipe was on the back of it. Seems easy enough.
