Homemade Kefir

Ingredients:

  • Micro Ingredients® Organic Inulin Powder
  • Micro Ingredients® Whole Milk Powder
  • Micro Ingredients® Allulose Sweetener
  • Kefir grains
  • Water

    Steps:
    1. Dissolve 4 tbsp of Whole Milk Powder in 2 cups warm water to create reconstituted milk directly in a jar.

    2. Add 1 tbsp Kefir Grains,1 tbsp Organic Inulin Powder and 1 tbsp Allulose Sweetener to the milk, then stir to mix well.

    3. Cover the jar with a tightly woven cloth or coffee filter and set aside at room temperature (60-90°F) for 18-24 hours to ferment into kefir. The kefir is ready when you notice some separation between curds and whey (a clear liquid). If it is fully separated, it could be over-fermented and will taste more sour.

    4. Strain out the grains with a strainer, transfer the finished Kefir to a clean jar, and store it in the refrigerator. For the best flavor and freshness, use within one week.

    5. Return the Kefir Grains to a jar and pour milk over them for future use.
